I am thinking about spending the summer kayaking around the islands in Greece and was wondering first of all if any one out there has heard of such a thing. and secondly, are you aware of any companies or sponsorships to help with some of the costs?

I'm not sure if the waters around Greece are suited for kayaking but I'm not entirely sure. However, I do know about a program that might be well suited for you. You apply by writing an essay and can be granted up to $10,000. You have to show that you've found balance in your mind/body while kayaking. It's probably perfect for your situation. It's not difficult at all. All you basically do is write an essay. That's it. The website is very specific and clear on how and what you should write about. Take a look. It's nothing to be intimidated by.

Most of the greek seas are usually windy. Certain others, like the ones at the west (Ionion) are more suitable for sea kayaking and are considered, one of the best destinations.
There is a new sea kayaking trip company, that make some multi-day trips around the islands of Kefalonia, Ithaki, Lefkada and Zakynthos.

I dont think that they could sponsor you, but perhaps you could ask them to join them to some of their scouting trips.

That's all I can say about sea kayaking, but if you 'd ask me about whitewater kayaking, I would say that Greece is perhaps one of the best, in class III-IV river paddling.
