I have stayed at the Ardleigh Guest House, I'd recommend it. It's got a view of the castle, it's handy for all things central and the accomodation itself was very comfortable. Reasonable prices. Let me know how you get on. Click on the Edinburgh b&b link below.

Don't forget to consider apartment rentals. Many offer stays from 2 or 3 nights and if you're travelling in a family group they can be a good alternative to hotels. Sites like Edinburgh-Flats and Edinburgh-holiday-Rentals list many properties which might be worth a look.
