I tried a deep fried beetle in Thailand. The woman tried to make me buy a bag but one was enough. It just tasted like something burnt, like burnt toast. I couldn't swallow it though

Hmm, where to start...

lambs testicles.....eaten them (for breakfast actually) (like salty grey blancmange)
pigs intestine stew.....had that
bath chaps.......had that (its rolled pig face, you can read about it on my blog)
sweet breads (also on my blog)
thorax......had it
pig head including snout, tongue and cheeks (cheeks are the best bit!)
chickens feet
lambs feet

I've pretty much eaten the lot! I would recommend it too!
Goat when cooked properly is amazing! Jamaican curried goat is really nice. mmmmm.
Look at a book called nose to tail eating by fergus henderson, it has a few eye opening but delicious recipes in it. His restaurant is pretty brilliant too in smithfield london.
Those are my top tips!

best thing about trying weird new food, is usually not knowing exactly what it is until after you have eaten it. you allow urself to appreciate more the taste without being preoccupied with what it is, but not that easy to do!!!
