OK so I'm going to narrow it down to a top 3
Queso Manchego (seco)
Mature Cheddar
Stilton
oh and of course Parmesan with pasta or on Pizzas !

My mum is french and therefore there is always loads of cheese in the house. I love it. I can't decide on favourites however, i like to have a cheeseboard with various cheeses on it. I like there to be a mix of strong, creamy, soft, and hard cheeses.I like Brie, Camembert, all kinds MMMMMMmmmm cheese! _________________ India Travel Plan |

Hmmm...I love so many!
A few of my favorites include:
Gruyere
Parmesan Reggiano
Mozzerella
On sandwiches I really like Muenster, Pepper Jack or Swiss. |

Yes Gail, can't argue with you about the manchego, I could eat it until the cows come home.........

Well, I love a strong Stilton with tangy red grapes; I love a mature (uncoloured) Cheddar with baked potatoes and on toasties; and I do like Camembert and Brie.
Having said that, I don't eat much cheese - although I'm probably eating more of it now than I did years ago, when a block of cheese might have resided in my fridge for a whole year without me being tempted!
Very occasionally I use Philly to bake a cheesecake yumm!
